a couple of veggy currys I love

Ok, I was pretty harsh about the veggy stew from Monsoon Diary and I realised that I'm not giving you many recipes for vegetarians. Think of these as a little bonus of yum yums. I'm afraid we have no pictures as I haven't cooked either of theses for a while.
The first recipe I'm going to give you one of my ex boyfriends dads gave to me. He was an amazing cook who hated the taste of meat but he really liked he's food hot and spicy. He's house was where I built up my chili tolerance. I have no idea where the recipe came from before hand so if I'm not crediting anyone I apologise.
As long as you have the spices and creamed coconut in the house you should nearly always be able to find the ingredients easily. I always cook this by sight and it never lets you down, it's just not for people who hate eggs.

Egg Curry
Ingredients
1 onion
2 cloves garlic
1 tsp each of
turmeric
coriander
cumin
garam masala
1\2-1tsp chili powder
a fresh chili or 2 if you like it hot
a small piece of creamed coconut
4-6 hard boiled eggs
1 pot plain yogurt
Method
fry the onions and garlic together with the spices until the onion starts to soften.
Add the creamed coconut and about 2 tblsp water, I pour just a glug straight from the kettle. You want just enough water to dissolve the coconut.
Add the yogurt and warm through gently, if the yogurt boils it will split. If it does split it doesn't affect the taste or edibility in any way, it just doesn't look as nice.
Add the hard boiled eggs and serve. If you've got fresh coriander its a nice addition, bot the beauty of this dish is the fact that it's so easy to make in an emergency. Serve with rice and maybe sagg aloo
Sagg Aloo
This is another recipe I make by sight, I use a small frying pan, the one that you fry eggs in.
Ingredients
About 2 medium potatoes or a few new potatoes, just enough to fill the frying pan
1\2 onion
1 garlic cloves
1 tsp each of
cumin
coriander
turmeric
garam masala
spinach
Fry the onion, garlic, potatoes and all the spices other than the garam masala together.
When the potatoes are cooked add the spinach. Spinach cooks down quickly to half the size so just add enough so that it looks right to you. I always buy fresh spinach and freeze any that I can't use before it goes off. I don't like the already frozen stuff just because I don't like the way it defrosts all bitty, I just use it straight from he freezer.
Sprinkle garam masala over the top for flavour.
These two recipes go together brilliantly and are really quick to cook together too. One of my favourite meals. These also don't cost a bomb to make. Hope you like.
